This unique process combined with the Pink Bourbon variety’s characteristics produces a coffee with intense and sweet tasting notes. We recommend enjoying this coffee as a pour over such as Chemex or V60 and notice how the flavor develops as the coffee cools in your cup. This coffee is produced by Wilton Benitez who has been known to experiment with unique coffee processing methods. This coffee was processed with thermal shock (washing the coffee with hot and then cold water), as well as anaerobic fermentation. This causes the coffee to have a higher glucose content and results in sweet and fruity flavors.
